Toyo Eatery, currently the Philippines’ most acclaimed restaurant, reopens its doors

<p>Like all restaurants in Metro Manila, Toyo Eatery closed its doors last March, as mandated by the enhanced community quarantine. It then opened for takeout and delivery service in early April, changing the menu to <em>pancit</em> and <em>silog</em> <em>bilaos</em> good for sharing. This was certainly a far cry from the sophisticated tasting menus of modern Filipino fare that Toyo became famous for, but the new takeout menu kept Chef Jordy Navarra, his wife May, and their team busy and productive.</p><p>With Metro Manila’s move to GCQ in mid-June, Toyo Eatery finally opened for dine-in customers on June 19. The restaurant announced its reopening via an Instagram post expressed in the context of the crisis at large, sharing that the quiet of the quarantine period “allowed us, individually and as a team, to see where we stand and how we can do better, as we get through this turmoil.” The same post shares, “The restaurant industry is very much a social thing, and the changes we all have to make will surely affect that somehow. There will definitely be big adjustments to be made, and still a lot of uncertainty as days go by. What we do know is we need to trust each other, be kind to each other, and never lose hope even when it feels like there’s only a little of it left.”</p><blockquote class="instagram-media" Avenue in Makati. Since it opened in 2016, it has only ever served dinner, whether à la carte or its tasting menu. But Toyo’s influence goes far beyond its small space, thanks to Jordy Navarra’s treatment of traditional Filipino dishes, flavors, and ingredients in modern and ingenious ways. The restaurant is Filipino to its core, but has also been able to connect with like-minded restaurants around the world, thanks to frequent collaborations and foot events. As rooted as it is in the Philippines, Toyo Eatery is also determinedly global, earning much respect and acclaim in the international food scene. It first won the Miele One To Watch Award in 2018 as one of Asia’s most promising restaurants, following that up by placing in the Asia’s 50 Best Restaurants list for the past two years, with this May Navarra told ANCX via text message, “Since we’re allowed to only have limited guests for dine-in, it’s been quite challenging for us at Toyo. We’re grateful that we have diners that trust us and who really appreciate the more personal experience! But of course, it’s really a difficult time now.” Currently, Toyo only offers its 8-course Tasting Menu with quite a number of new dishes included.
