HandoutMANILA — Two of Manila’s most inventive food brands are joining forces for a limited-time collaboration. The Underbelly and Tupi Dumplings have launched The Unfolding, a crossover menu available only until November 2 at The Underbelly in Makati City.</div>The menu combines The Underbelly’s experimental ramen concept with Tupi Dumplings’ chef-crafted comfort food. The collaboration aims to explore “how far flavors can stretch when tradition is folded, broken, and rebuilt,” the brands said in a joint statement.The special menu features six dishes:* Scallop Tostada (P510) — Hokkaido scallops cured in lime and mint, served on a fried wonton crisp.* Pork Floss Gyoza (P520) — Pan-seared dumplings with chili garlic salsa and pork floss.* Pork and Shrimp Dumplings (P620) — Classic dumplings topped with Szechuan chili crisp and yuzu aioli.* Szechuan Chickpea Noodles (P420) — Chickpea wheat noodles with kuchay dumplings in Szechuan sauce.* Shrimp Wonton-men (₱600) — A prawn-and-shrimp take on tantanmen ramen.* Vanilla Ice Cream with Lao Gan Ma (P230) — Ice cream with chili oil and crisp.Founded by designer Dan Matutina and Tasteless Food Group founder Charles Paw, The Underbelly is known for reimagining ramen with unconventional flavors and techniques. Tupi Dumplings, founded by Isaac and Coey Punsalan during the pandemic, meanwhile, offers hand-folded, flash-frozen dumplings made with premium ingredients.<div><img src="https://od2-image-api.abs-cbn.com/prod/editorImage/1761556092789_MG_5114.jpg" style="width:950px" class="fr-fic fr-dib"/>Chefs Potz Isaac, Jackson Chua and Noel Mauricio. HandoutChef Potz Isaac, founder of Tupi Dumplings, said the collaboration reflects their shared focus on creativity and craftsmanship. “Each dumpling is made by hand in small batches, filled generously, and inspired by bold, balanced Asian flavors,” Isaac said.</div>Chefs Jackson Chua and Noel Mauricio of The Underbelly said the partnership allowed them to experiment further. “We’ve never believed in playing safe.
