Pork roast is one of the most delectable centerpieces for festive tables, especially during the holiday season. And according to Chef Joaquin Antonio Migallos of Esguerra Kurobuta, the journey from pasture to plate makes all the difference in its flavor. In their farm in Batangas,  the pigs listen to music, are plant fed, roam freely, and are raised  stress-free. “Happy pigs equates to good meat. How they are raised impacts the taste—pag na stress rayo we get sick. Same with pigs,” he explained in an interviee. “That is one of the highlights of Kurobuta—walang lansa, very clean. We do not use antibiotics, no growth hormones, pasture raised. The pigs are really taken care off.”The chef revealed even their slaughtering process is gentle: “They don’t know they will be slaughtered. They should not cry. We don’t put them in trucks. Naiihi kasi sila when they are scared and that stays in the skin.” Originally a horse ranch, Migallos said the owner pivoted it into a raising purebred Berkshire pigs during the pandemic.“It is a breed from England, brought to Japan in 30s. We imported a lot and now we are breeding them ourselves, they are pure.”Esguerra Kurobuta seasonally offers the Coppa Roast, which is marinated in their signature sauce.The premade roasts are available in 2kg for 5,500 pesos and 3.5kg for 8,500 pesos, serving 15 to 20 people.“The pinkish color similar to beef is part of the marinade and the meat itself is pinker than other porks.” “We brined for three days, dry-rubbed, and injected befoee cooking. It is finished with BBQ sauce or mango peach sauce and Chimichurri.”“It is very tender, slightly smokey and very juicy. It pairs perfectly with chimichurri. It cuts the richness of the fat,” Migallos said.Meanwhile, for the rest of the cuts available year round, such as the tonkatsu and rib eye, the distinct “clean taste”  of their meat, which they proudly called the “Wagyu of Pork” can be enjoyed with minimal seasoning,“For example, the steak version, you only need salt and pepper to make it good,” he reasoned.The meat shop is located at 94 Scout Rallos, Brgy. Sacred Heart, Diliman District, Quezon City, Philippines.
