Handout</div>MANILA — The Westin Manila has partnered with The Farm at San Benito to bring plant-based, farm-to-table dishes to the city as part of its “Green Mondays” dining series.The collaboration, part of the program’s sixth edition, features a selection of wellness-focused dishes inspired by The Farm at San Benito’s cuisine. The offerings will be available at the hotel’s Seasonal Tastes restaurant from April 13 to May 25, 2026.Launched in 2024, Green Mondays highlights healthier and more sustainable dining options through partnerships with local chefs, brands and food producers that promote mindful eating.The featured dishes will be served à la minute at the One Dish Wonders live station during the Monday lunch buffet. Rej Casanova, executive chef of The Westin Manila, said the partnership reflects a shared focus on wellness and ingredient-driven cooking. “As a ‘sanctuary’ for restorative wellness rooted in nature, the restaurants at The Farm
at San Benito and their menus are curated very much like ours, always with guest
wellbeing in mind,” said Casanova. “So, a
partnership to bring thoughtfully curated, plant-based menus made with organic,
whole food ingredients was a logical collaboration for us.”The Farm at San Benito, located in Lipa, Batangas, is known for its wellness programs and plant-based cuisine. Handout</div>Marie Pagcaliwagan, executive chef of The Farm at San Benito, said their approach centers on using organic produce, much of it sourced from its own gardens, to create dishes that support overall well-being. Crafting plant-based cuisine is not an easy feat,” Pagcaliwagan said. “It takes
significant mastery of technique and knowledge of the produce you can use for the
cuisine, but when you’re in a place with an abundance of whole food ingredients
around you like at The Farm at San Benito, it is much easier to get creative and come
up with new dishes built around conscious nourishment of the body.”Menu highlights for the collaboration include chili garlic cauliflower and beetroot croquette with cilantro chutney, as well as a selection of salads featuring fresh herbs and vegetables.The dishes will be available during the lunch buffet from 12 p.m. to 2:30 p.m. on Mondays throughout the promo period.
