Handout</div>Filipino-Australian chef Oliver “Oli” Buenviaje is set to open a modern take on the traditional “dampa” dining concept in Quezon City, bringing his international culinary experience back to his home country.Seafood 8 by Olio’s is scheduled to open this August at Gateway Mall 2 in Araneta City. The restaurant will offer a market-to-table format where diners choose fresh seafood and have it prepared on-site.The concept is based on the traditional “dampa” experience popular in the Philippines, where customers select raw seafood and have it cooked to order. At Seafood 8, guests will be able to choose from grilling, frying or steaming methods, along with a selection of signature sauces.The 130-seater restaurant will feature live seafood displays and seafood items kept on ice. It will also offer eight signature sauces inspired by Buenviaje’s international culinary experience, including miso butter, chimichurri, pomodoro, gambas roja, bagoong béarnaise and sambal XO chili.Buenviaje, who was born in Sorsogon, Bicol, has worked in Michelin-starred restaurants and luxury hotels around the world, including in France, Australia, Thailand, Hong Kong, Macau and the United Arab Emirates.His career included stints under chefs Alain Fabrègues and Alain Ducasse, as well as work at restaurants in properties such as the Burj Al Arab and Mandarin Oriental Bangkok. He later founded Olio’s Fine Food Catering in Australia, serving corporate clients including Rolls-Royce, Chanel and Bentley.He most recently managed food and beverage operations at The Residence on Langley Park in Perth and runs a private dining service that caters to homes, yachts and vineyards.Buenviaje traces his culinary roots to his childhood in Sorsogon, where he spent time on his grandfather’s rice fields and fish ponds. He has cited his grandfather’s emphasis on hospitality and sharing meals with farm workers as a lasting influence on his approach to food.Seafood 8 by Olio’s is positioned as an upscale interpretation of the dampa experience, combining fresh seafood selection with restaurant-style service in a mall setting.
