Can you say “Viennoiserie”? Because I can’t. But fear not, intrepid eater, because all around you in Manila these days are exemplary examples of said delicacy—you can just call ‘em croissants. Yes, pronounced “kwasang”. Hehe.One of the very best in the region is a Singaporean brand called <a href="https://www.instagram.com/tiongbahrubakeryph/" rel="noopener noreferrer" target="_blank">Tiong Bahru Bakery</a>. The original caused quite a splash a while back, producing some of the finest examples of viennoi.... uh, croissants... ever seen in those parts. Singapore natives went nuts for them. It is quite a thoughtful location, to be honest, and sitting there certainly gives one a sense of joie de vivre (can you say that? Because I can&#x27;t)! But a good cafe isn&#x27;t just a place to sit and stare into nature—they must also have the goods. And my oh my, do they have the goods! The brand Tiong Bahru Bakery takes their craft very seriously, being sticklers for technique and most importantly—using only the finest French flours and butter. They guarantee you can taste the difference in every bite—their head chef, Frenchman Jean-Marc Bernelin, says their Viennoiserie take three days to make! Not easy to whip up, but the results really show their dedication. But do not snub the other stuff, because that would be folly—a decadent kouign amann, a CHOCOLATE koign amann, canelles, and sugar-topped brioche. Highly recommended, too, are the savories: a classic quiche Lorraine, a sandwich of grilled vegetables, a ham and Gruyère-filled croissant. But for me, the sleeper hit (which I do hope you all get to order!) is a very, very French sandwich of jamon and beurre (that’s buttah to me and you!) on a baguette. Their coffee beans are the same ones used in the new kid on the block Common Man, and they do indeed make very aromatic and tasty coffee. Do the French thing and dip that Viennoicrossaint into your latte—much like a pandesal into barako. It is such a match! If coffee ain&#x27;t your thing, there are also teas and juices as well. Take a seat, share a good convo with a friend, listen to the tunes in the background, and let some time laze by as you munch and sip on the good stuff. That, my friend, is a blessing, and you can thank big red J Bee for that.
