It’s 2024, and Maniila’s restaurant scene is vibrant and pulsating with excitement in a way it’s never been before. Restaurants seem to open right and left at the drop of a button, and the dining scene is full to the brim with popups, chef collaborations, exclusive menus, bar takeovers. There are so many, it can leave you feeling bewildered by it all.


Here’s a nifty guide to the best dining experiences to be had this month. A series of exciting chef collabs with fantastic concepts, an adventure through the flavors of southwestern France, a chance to meet three famous Michelin-starred chefs and a sake master. Bon appetit.


MODERNE: Moderne French x Modern Japanese - For two exclusive evenings, Metronome and Mōdan will be hosting one-of-a-kind collaboration dinners between chefs Miko Calo and Jorge Mendez. Featuring the same Modern French x Modern Japanese collaboration menu on both nights, dishes will be served in the style of the respective restaurants. Let’s Eat - This 12-hands, five-course benefit dinner brings together five of the country’s best chefs and award-winning mixologist to raise funds for the medical bills of Spanky Enriquez, a beloved bastion of the local restaurant industry. Flamenco Flavor - Get ready for a taste sensation at Tomatito’s Four-Hands Dinner with chef Willy Trullás Moreno and Alfredo Sangrado Rodriguez cooks up a seven-course dinner in honor of the launch of the new store at Estancia, Capitol Commons. Panapos by Chef Miko Aspiras - The Balmori Suites’ newest pop up is entitled ‘panapos’, the Tagalog word for completion. This is a collection of savory and sweet dishes inspired by pastry techniques and bound by the imagination of multiawarded chef Miko Aspiras, rooted in Filipino ingredients and creativity. The menu will feature savory small plates, mains, show-stopping desserts, and thirst-quenching cacao-centric cocktails. Available from march 9 to April 7 at The Balmori Suites.
