We will not make it a Filipino-Western steakhouse. We are an authentic Western brand. People who want Filipino taste, go somewhere else. We butcher our own meat, we do our own dry aging. We currently have three tonnes aging in our cellar, enough to serve for the next few weeks,” Hardyment explained.Signature offerings such as the USDA Prime 28-Day Dry-Aged New York Strip, the richly marbled Bone-in Rib Eye, and the smoky American Wagyu Swinging Tomahawk deliver the “cuts-like-butter” tenderness and melt-in-your-mouth experience steak lovers seek.For Hardyment, the commitment to sourcing and technique isn’t just about making an impression — it’s about setting a standard.<div>“Smith &amp; Wollensky sources its beef from one supplier in Washington. Sides like creamed spinach, sautéed mushrooms with chorizo, whipped potatoes, and foie gras rice are crafted to complement the mains.That same quality carries through to desserts, including the towering Gigantic Chocolate Cake and the dramatic Baked Alaska.“The portions are big — U.S. portions — so we designed the dishes to be shareable,” Hardyment added.The Smith &amp; Wollensky experience also extends to its beverage program and lounge.For the soft opening, Grammy-nominated jazz pianist Bobby West set the tone for the restaurant’s musical direction.“Our target is for wine to be the best,” Hardyment said. “We saw our competition, and if you see our wine cellar, it will blow most people away. We have stuff that will truly be exceptional.”“We have the best food, the best wine, and the best music — and in the Philippines, that is hard to say because they have amazing music,” he added.According to Hardyment, plans are already underway for a second location.“We were ready to bring it in this year. Ten years ago — or maybe five or six — it was too early,” he said. “But now, especially in this area, it&#x27;s like Singapore or Taipei.
