Anna Cerezo, ABS-CBN News</div><div> </div>MANILA — From the kitchens of Southern Mindanao to the prestigious pages of the Michelin Guide — Tausug cuisine has officially made culinary history.Chef Miguel Cabel Moreno’s Palm Grill (Diliman), which proudly celebrates the traditional recipes of the region, along with his modern Filipino restaurant Cabel, were among the 25 establishments honored with the Bib Gourmand distinction in the first-ever Michelin Guide Philippines.<div><a href="https://www.abs-cbn.com/lifestyle/food-travel/2025/10/31/michelin-guide-launches-first-ever-ph-selection-108-restaurants-make-the-cut-0705">Michelin Guide launches first-ever PH selection: 108 restaurants make the cut</a></div>“This is not just a win for me and my family — it’s a win for the Tausug people. I’m big on representation. My restaurant is tasked to showcase the best of Mindanaoan cuisine,” Moreno said in an interview, noting that being featured in the iconic Michelin Guide places Mindanao flavors on the global culinary map.“My team is ready. I always tell them to keep doing what we’ve been doing since day one — to change the narrative of Mindanao, one dish at a time. For the past nine years, our goal has remained the same: to serve the best food possible and show the world the richness of our region’s cuisine,” be added.The Bib Gourmand celebrates restaurants that serve high-quality dishes at a good value for money, which Moreno said they are able to achieve through their farm-to-table approach.“Ever since we source the ingredients in Zamboanga, Sulu, Tawi-Tawi. It is our way of supporting farmers. We have a commissary in  Zamboanga that produces all the ingredients we need,” Moreno explained.“It is being flown to Metro Manila. One way to give back to farmers and to have a price that is not so high,” he added.Rooted in centuries-old Tausug culinary traditions, Palm Grill’s standout dishes pay homage to Southern Mindanao’s rich heritage. Among them is Tiyula Itum, a deeply flavorful black beef soup infused with burnt coconut, spices, and charred bone marrow. Equally unmissable is the restaurant’s signature Piyanggang Manok, grilled chicken bathed in a smoky, coconut-based sauce.“Tausug people are the only people in the Philippines that incorporates burnt coconut into their cooking. There is no where else in the country you will find that,” Moreno enthused.“This is a pre-colonial process and method of cooking. This is of the things we highlight at the restaurant so the younger generation does not forget. At the same time they get to experience it. That is one of our core values,” he added.Meanwhile, Cabel recently introduced “Fiesta Cabel,” a vibrant Sunday buffet that celebrates not only the rich flavors of Mindanao, but also the best of regional Filipino cuisine from Luzon and Visayas as well— with most dishes rooted in generations-old family recipes.“With us, it’s like coming home to your ancestral house — that kind of feeling,” Moreno shared. “Food has always been what brings people together, and that’s the story we want to tell.”
