Handout</div>MANILA — Through its partnership with École Ducasse, Enderun Colleges hosts the first École Ducasse campus outside France, serving as the institution’s regional hub in Asia. Founded by Chef Alain Ducasse, École Ducasse brings its French culinary training model to Filipino students, with an emphasis on technical rigor and practical application.École Ducasse Manila recently held an intimate pastry demonstration at the Enderun campus, led by Nicolas Pasdeloup, the newly appointed executive pastry chef. The event was attended by prospective students and members of the mediaDuring the demonstration, Pasdeloup prepared a pistachio and cherry choux pastry while sharing insights from his more than 30 years of experience in international kitchens. Trained in Paris, Pasdeloup has held senior pastry roles with luxury hospitality brands including Rocco Forte Hotels, Hyatt Regency and Regent Seven Seas Cruises, and has served high-profile clients such as the Norwegian Royal Family and Nobel Peace Prize laureates.Pasdeloup emphasized the importance of classical French pastry as a foundation for innovation. “Students need to understand where the craft comes from — not just to preserve it, but to keep it alive and allow it to grow. That foundation is essential in training,” he said.He also underscored a teaching philosophy rooted in patience and mentorship. “The more pressure you put on people, the more they get lost,” Pasdeloup said, adding that he sees strong potential among Filipino pastry students as global exposure continues to expand through travel and digital platforms.Following the demonstration, guests sampled the finished pastries, followed by a generous pastry buffet that encouraged conversation and exchange. École Ducasse Manila offers programs including a Certificate in Professional Pastry Arts and a Diploma in Professional Pastry and Bakery Arts, designed to prepare students for international culinary careers under the guidance of experienced chefs.Pasdeloup, who has longstanding ties to the Philippines, said success in pastry requires both discipline and confidence. “You have to be strict with your work,” he said, “but more importantly, you have to believe in what you do.”
