Handout</div>Sebastian&#x27;s Ice Cream has unveiled its summer 2026 lineup, featuring new halo-halo-inspired ice cream flavors, coconut ice cream bars and vegan sorbets highlighting nata de coco, the Filipino coconut gel invented in the country.The “Halo-Halo Festival” collection pays tribute to the iconic Filipino dessert through three flavors: Halo-Halo Classic, made with ube ice cream, kaong, red monggo, buko and langka with a leche flan ribbon; Pampanga Style, inspired by the province’s white halo-halo and featuring macapuno ice cream, saba bananas and pastillas de leche; and Sebastian’s Style, a fruit-forward variation with blackberry ice cream, mango, raspberry and kamias sorbets, nata de coco, Fuji apple chunks and coconut cream leche flan.<div><img src="https://od2-image-api.abs-cbn.com/prod/editorImage/1778486600879popsicles.jpg" style="width:960px" class="fr-fic fr-dib" width="960"/>Coconut ice cream bars. Handout</div>The brand also introduced a new line of coconut ice cream bars inspired by classic coconut-filled chocolate bars. The lineup includes Coconut Almond, made with roasted almonds and coated in milk chocolate; Coconut Dark Chocolate, a vegan dairy-free version dipped in 70% dark chocolate; and Coconut Latik Pili, which combines coconut ice cream with latik caramel and roasted pili nuts.Sebastian’s partnered with Risa Chocolate for the chocolate coating used in the bars. The artisanal chocolate brand sources its cacao from South Cotabato.The company also launched its Nata de Coco Sorbet series, which highlights the Filipino origins of nata de coco through dairy-free fruit sorbets mixed with coconut gel. Available flavors include Nata de Coco con Buko, Nata de Coco con Pinya and Nata de Coco con Calamansi.According to Sebastian’s, the collection was partly inspired by a desire to celebrate nata de coco as a Filipino invention created by chemist Teódula Kalaw África.The summer offerings are available at Sebastian’s flagship branch at The Podium. Selected halo-halo flavors and coconut ice cream bars are also available for delivery through the brand’s online store.
