Buenviaje said he will personally bring the seasonal truffles to Manila for the dinner.The menu pairs premium ingredients such as Osietra caviar, Japanese scallops, Norwegian salmon and Black Angus beef with wines from Germany, South Africa, Australia and Hungary selected by World Cellar sommelier Benedict Tan.Among the featured dishes are Aged Wagyu Tartare with Osietra Caviar and fresh truffles, Japanese scallops with bergamot and candied bacon, mushroom risotto with Norwegian salmon and truffle sabayon, and Aged Black Angus Tenderloin served with Perigueux sauce. Dessert combines brioche, caramelized Bleu d&#x27;Auvergne cheese, honey and fresh truffles.Buenviaje, who grew up in Sorsogon, said the menu reflects both his Filipino roots and his experience working in Australia.&quot;My roots in Sorsogon have always shaped the way I see food,&quot; he said. &quot;Through Truffle Alchemy, I wanted to create a menu that reflects those memories while showcasing the elegance of Australian truffles and exceptional produce.&quot;Buenviaje has worked with French chefs Alain Ducasse and Alain Fabrègues and in luxury hotels in Australia, Thailand and the United Arab Emirates. He now operates Olio&#x27;s Fine Food Catering and the private dining concept Maison Privé in Australia.He is also <a href="https://www.abs-cbn.com/lifestyle/food-travel/2026/6/2/fil-aussie-chef-to-open-modern-dampa-concept-to-gateway-2-1526">preparing to launch Seafood8 by Olio&#x27;s</a>, a seafood-focused restaurant at World Kitchens.Australian black winter truffles are harvested from June through August and have become increasingly sought after by chefs worldwide, joining France and Italy among the leading producers of the prized ingredient.
