The French-trained Kapampangan chef has <a href="https://www.abs-cbn.com/life/04/20/17/pampanga-eats-chef-saus-25-seeds-is-a-mansion-of-kapampangan-delight">helmed multiple restaurants</a>, appeared in various cooking shows such as <a href="https://www.abs-cbn.com/ancx/food-drink/features/04/26/22/he-lost-junior-master-chef-now-his-food-is-winning-fans">&quot;Junior MasterChef: Pinoy Edition,&quot;</a> and represented the country in prestigious food events such as the <a href="https://www.abs-cbn.com/ancx/food-drink/features/11/08/19/how-chef-sau-impressed-em-with-sisig-at-spains-most-prestigious-culinary-congress">San Sebastian Gastronomika in Spain</a>.Recently, Del Rosario added another feather to his well-decorated cap as the new culinary director of Ladurée in the Philippines. Handout </div>The new role is right up Del Rosario&#x27;s alley, as a chef who has famously fused classical French methods with Filipino ingredients. And it shows in Ladurée&#x27;s updated menu with dishes like Escargot au Lait de Coco, where Burgundy snails are simmered with spinach in coconut cream. It&#x27;s reminiscent of laing and ginataang kuhol, only in bite-size portions in a crisp rice shell.There&#x27;s also the Duck Confit Adobo a l&#x27;Orange, where the famous French dish is finished with Filipino flavors. Handout </div>&quot;Having spent time in Paris and experienced its culinary culture firsthand, it&#x27;s an honor to help continue that tradition here in Manila,&quot; Del Rosario said. &quot;My role is to build on Ladurée&#x27;s remarkable foundation by creating dishes and experiences that encourage guests to discover something new while staying true to the spirit that has made the brand beloved around the world,&quot; he added.With Del Rosario&#x27;s culinary direction, Ladurée hopes to go beyond its popular macarons and pastries as it enters its next phase of growth for the Philippines. The French brand is looking to expand through new formats — in the short term, customers can look forward to a Ladurée travel retail boutique, a first in Southeast Asia, at Terminal 3 of the Ninoy Aquino International Airport. This will be followed by a new cafe concept at SM Megamall that caters primarily to younger markets.
