Handout</div>Taking matcha beyond the massive trend of slow bars and weekend pop-ups around the metro, The Westin Manila hosts a series of monthly workshops in partnership with matcha enthusiast and educator Jacque Medestomas of Jacque and Matcha.  Offered once a month and priced at P4,300 nett per person, inclusive of workshop tools and ingredients, plus an individual afternoon tea set served during the class, this workshop is part of the hotel’s curated interactive weekend  learning sessions designed to bring the community together through wellness. Medestomas, a member of the Urasenke Tankokai Manila Association, an organization for practitioners and students of the Urasenke school of Japanese tea ceremony (chado), got into matcha during the pandemic and traveled to Japan to learn more about matcha, and seek out artisans and suppliers, before eventually putting up her matcha business. “I&#x27;ve visited tea farms and facilities and talked to farmers,” Medestomas notes. “It was such an eye-opening experience, and what I find the most fulfilling about my passion is I get to share the process that goes behind making matcha before it is turned into powder.”For those who can’t quite get enough of that matcha fix, the next step to the matcha craze is usually making matcha at home, but it can get quite overwhelming for beginners, especially with the growth of online matcha purveyors online selling matcha powders and tools, not to mention the plethora of influencer videos showcasing elaborate matcha stations and whisked concoctions. <div><img src="https://od2-image-api.abs-cbn.com/prod/editorImage/1787562527523image4.jpeg" style="width:500px" class="fr-fic fr-dib"/>For the matcha-obsessed, making matcha at home is the usual progression from frequenting matcha establishments. Handout</div>“Workshop participants learn how to make their own matcha, so that they can enjoy it in the comfort of their home,” states Medestomas. “On top of that, the workshop is also designed to help students have a deeper understanding of the tea that they consume.”The workshop, which runs for several hours, covers the history of matcha, the principles of the Japanese tea ceremony, tea-growing regions in Japan, how matcha is processed from leaf to cup, properties of a good matcha and demystifying matcha labels. <div><img src="https://od2-image-api.abs-cbn.com/prod/editorImage/1787562599283image2.jpeg" style="width:500px" class="fr-fic fr-dib"/>The matcha workshop is designed to give participants a deeper understanding of the tea they consume. Handout</div>The workshop also covers hojicha, the roasted green tea which is fast gaining popularity alongside matcha because of its lower caffeine content and chocolatey notes. Participants also take part in a tasting session to compare different types of matcha from the different matcha-producing regions in Japan, in koicha (thick) and usucha (thin) variations, as well as different types of dairy and non-dairy milk to add to their matcha drinks. “The tasting helps participants discern what kind of flavor profiles they prefer. Just like coffee, matcha has different flavor profiles depending on where it’s grown, how it’s processed, and even the type of milk and the flavors of the syrup you use,” Medestomas notes. Of course, the highly anticipated portion of the workshop is making two matcha drinks, and Medestomas walks the participants through the various tools that can be used to make matcha, whisking techniques, and recipes and proportions.  “Try as much matcha as you can,” she advises workshop participants. “Even if you already have your matcha preferences, don’t be afraid to try new matcha powders, because you never know when one might surprise you.”<div><img src="https://od2-image-api.abs-cbn.com/prod/editorImage/1787562630184image6.jpeg" style="width:500px" class="fr-fic fr-dib" width="500"/>The matcha workshop is priced at P4,300 nett per person, inclusive of workshop tools and ingredients and an individual afternoon tea set served during the class.
